I found this in my Southern Living at Home "Homecooking Cookbook" last night while searching for recipe to use up some of my fresh stuff. It is called Chicken Fajita Potatoes and it is yummy! It's chopped bell peppers and chopped onion cooked then add a tablespoon of taco seasoning, cook a bit more, add cooked cubed chicken and shredded taco style cheese. Split open a baked potato (we used sweet potatoes) fill with the mixture add salsa to the top and a dollop of sour cream. YUMMY!! I think next time we'll try it with a regular potato and see what we like best.
Then I washed my dishes with my new faucet! Woo hoo! Actually we've had the faucet since Veteran's day as well as an under the sink filter. I love it, love it, love it!
