Baking Boy
We made pumpkin butterscotch muffins together.
I failed to photograph the finished product, but they look like the ones in the link. Kyle and Reese love them. I think they are a bit too sweet. Butterscotch chips are super sweet. Next time we make these I think I'll cut back on the sugar a wee bit and see if anyone notices.

Muffin Tin Monday

So basically I go to my designated blogs of choice every night to feed my daily fix. If someone I like references something interesting I go there and so on. This happened last night---through some convoluted path I can't retrace I wound up here. I found this awesome Muffin Tin Monday thing. I have thought about serving Reese's meals this way but have not gotten around to it. This blog event has inspired me! And I love the muffin tin picture she has!!
I'm going to link this up to the Muffin Tin Monday site, so folks may click over who haven't before. For those folks I just want to quickly explain hubby works swing shift so we have dinner around 1pm everyday. Daddy handled drop off and pick up of Reese from "preschool." Gus and I stayed home to cook. He had a blast!
pork chop, homemade macaroni and cheese, green beans from our garden, mini marshmallows (he discovered these at Mimi's house last week), raisins, nectarines that we canned.
He was pretty excited about the serving display. I used a silicone muffin pan. He dug in before Daddy even made it to the table. Yes that's a raisin on the fork!
SUCCESS! I think we'll have Muffin Tin Monday everyday!!

Menu Plan Monday

We keep bumping the black bean, barley and corn burritos. Last week we substituted beef stew because I had meat to use up. This week is a bit packed with stuff to do before Kyle goes to work so this week's plan is more of a "I would like us to eat" than a we will definitely eat week! I'm not even going to try to fit in the crock pot meal.
Monday: Since we never got to the teriyaki pork chops this weekend we will have Stubbs Pork marinated pork chops, homemade macaroni and cheese, green beans from our garden
Tuesday: Silverdale errands = eat out
Wednesday: spaghetti and aidell's meatballs
Thursday: Lunch with Kyle's grandparents and parents
Friday:I have 2 doctor appointments so leftovers or eat out
Saturday: chicken tetrazzini, beans from our garden or broccoli
Sunday: Cheddar Chicken and Potatoes and broccoli

All About Angus
Here he is on Mimi's couch looking like fat rolly baby, but he's only 25th percentile in weight. The double chin cracks me up. Incidentally my double chin is gone and happily my snoring went with it. Reese and Kyle found it greatly amusing that I could sleep sitting up feeding Gus and snore super loud---they'll have to entertain themselves some other way now because the tubby Mommy is finally almost a normal size again! (30 pounds down about 10ish to go!!!)
Menu Plan Monday
So planning for the whole month is just silly. I have to keep going back and changing things, so I don't know if I'll do that again. It is nice to have a rough draft plan I guess so maybe I will keep doing it on a monthly basis. Then we'll just tweek it as needed. For example, green bell peppers where on sale so we had stuffed peppers today which wasn't planned for and costco didn't have my alfredo sauce so we didn't have ravioli whenever we were supposed to. On to this week:Monday: Stuffed peppers
Tuesday: Jambalaya with Zatarain's rice and Jennie-O turkey keilbasa and shrimp
Wednesday: leftovers
Thursday: Black Bean, barley and Corn burritos--crock pot
Friday: leftovers
Saturday: Teriyaki Pork Chops (just marinated in teriyaki sauce), hern and butter rice, broccoli
Sunday: Crunchy Tacos (hard shell, black beans, ground beef, lettuce, tomatoe) and spanish rice
I'll take a photo later and discuss it, but I just had to let you know Reese spent the past 2 nights (all night) without a peep in his big boy bed!!!! AND he "made" his bed on his own---an old blanket of Kyle's pulled over the whole bed to protect it from the cat hair because Tara loves to sleep on there.

The Mayonnaise Jar and 2 Cups of Coffee
When things in your life seem almost too much to handle, when 24 hours in a day are not enough, remember the mayonnaise jar and the 2 cups of coffee.
A professor stood before his philosophy class and had some items in front of him. When the class began, he wordlessly picked up a very large and empty mayonnaise jar and proceeded to fill it with golf balls. He then asked the students if the jar was full. They agreed that it was.
The professor then picked up a box of pebbles and poured them into the jar. He shook the jar lightly. The pebbles rolled into the open areas between the golf balls. He then asked the students again if the jar was full. They agreed it was.
The professor next picked up a box of sand and poured it into the jar. Of course, the sand filled up everything else. He asked once more if the jar was full. The students responded with an unanimous "yes."
The professor then produced two cups of coffee from under the table and poured the entire contents into the jar effectively filling the empty space between the sand. The students laughed.
"Now," said the professor as the laughter subsided, "I want you to recognize that this jar represents your life. The golf balls are the important things---God, your family, your children, your health, your friends and your favorite passions---and if everything else was lost and only they remained, your life would still be full.
The pebbles are the other things that matter like your job, your house and your car.
The sand is everything else---the small stuff. "If you put the sand into the jar first," he continued, "there is no room for the pebbles or the golf balls. The same goes for life If you spend all your time and energy on the small stuff, you will never have room for the things that are important to you.
"Pay attention to the things that are critical to your happiness. Play with your children. Spend time with your parents. Visit with grandparents. Take time to get medical checkups. Take your spouse out to dinner. Play another 18. There will always be time to clean the house and fix the disposal. Take care of the golf balls first---the things that really matter. Set your priorities. The rest is just sand."
One of the students raised her hand and inquired what the coffee represented. The professor smiled "I'm glad you asked.
It just goe s to show you that no matter how full your life may seem, there's always room for a couple of cups of coffee with a friend."

menu plan monday
okay on to menu planning
We had leftover lasagna in the beginning of last week. And we bought pork chops at Costco so added them to the menu this week. SO we did not eat nachos, or fried rice. oops!Last night I went through and planned for the rest of the month--4 weeks. Then I made 4 shopping lists of what we'd need to make those meals--week 3 I don't need to buy anything! Of course we'll need milk and fresh produce and such but really I discovered I can basically make a month of meals just out of our freezer and pantry. Woo Hoo!
Week One Sept. 7-13

DOCTORS DOCTORS all week long!!
I also saw my primary care physician and we are starting the weaning of the blood pressure drugs process. Woo hoo! I am hoping to dump them altogether ASAP. I also had my cholesterol checked and got the results back. My total is 280 (should be >200). Triglycerides 176 (should be >150) and LDL 206 (should be >100). SO........I have to start statins to get that under control. However you can't breast feed on that class of medication. So I am going to really make an effort to get my numbers down during the rest of the time I'm breast feeding. Hopefully I can take a low dose. I don't believe I can control it with diet and exercise just because of my family history but I'd like to avoid a high dose at this point. I'm looking at A LOT of years of taking statins. Since they ruin your liver I'd prefer not to destroy mine with medicine before my kids are out of high school.

menu plan monday
Last week I totally forgot to take a picture of my beautiful lasagna! It turned out quite yummy! Here is the recipe I used:30 oz ricotta
2 cups mozzarella
1/4 cup Parmesan
2 eggs
2 26 oz jars of sauce
noodles
diced zucchini from the garden
mushrooms
10 oz package of frozen chopped spinach, thaw and squeeze out liquid
Cook mushrooms and zucchini with some minced garlic. Mix ricotta, 1 cup mozzarella, parmesan, 2 eggs, and spinach. Mix zucchini and mushrooms into sauce (also put your meat here if you like meat sauce). Put one cup of sauce in 9 x 13 pan, layer uncooked noodles to fill the pan, cup of sauce, 1/2 the ricotta mixture, sauce, noodles, sauce, ricotta, sauce, noodles, sauce. Cover with aluminum foil, bake at 375 1 hour. Remove foil, sprinkle one cup mozzarella, bake 10 more minutes. Serve!!
This uses more sauce than a traditional recipe so you can use normal lasagna noodles and skip the pre-boiling step.
For this week we have 5 doctors appointments int he day before Kyle leaves for work at 3pm. So.........I think I am going to try to prep dinner the night before so it's essentially ready otherwise we'll eat out every day while we're out at the various doctors. I think I'll just plan meals and we'll eat them as we feel like instead of assigning a day. This week in no particular order we will eat:
- spaghetti and aidell's meatballs
- 15 bean cajun soup (recipe on bag of dry beans)
- teriyaki chicken with brown rice and peas
- nachos with ground beef, black beans, tomatoes, cheese, salsa
- veggie fried rice and egg rolls
- leftovers
