We have several food related goals for 2011. Menu Planning will definitely be required to keep on track. We went to Costco last Thursday and have vowed we will NOT return until the last week of the month. Hopefully this will help in our quest to save some money because we spend a ridiculous amount of money food. I have actually plotted the full month in an effort to avoid the grocery store as long as possible too. This week we'll be enjoying:
MONDAY: Chicken tetrazini, brussels sprouts gratin
TUESDAY: monday's leftovers
WEDNESDAY: red beans and quinoa chili (beans and meatless!)
THURSDAY: sausage and peppers over rice
FRIDAY: PW's Shrimp Quesadilla
SATURDAY: Food Matters Cookbook (Christmas Gift) Navy Bean Gratin
SUNDAY: Fajitas and Spanish Rice

Sounds yummy! Those P-Dub quesadillas look delish. (By the way, the zucchini quesadillas went over very well last night!) Food is one category where I feel I've cut back just about as much as I feel comfortable doing... we keep that budget pretty low, I think. In fact, with G eating more and more all the time and A's boy appetite growing by leaps and bounds, hubby increased our monthly food budget a bit for this year to take some pressure off me. :)
